Ginger Tigernut Cookies

Tigernuts are actually not a nut at all but a starchy vegetable and a source of resistant starch. These cookies have a lot going for them nutritionally and have a fantastically scrumptious gingery taste.

 170 g tigernut flour
 65 g coconut sugar
 1 tsp baking powder
 ½ tsp ground ginger
 salt
 120 g chopped stem ginger
 85 g melted coconut oil
 1 Flax-egg (1 tbsp ground flaxseeds in 3 tbsp warm water left for 10 mins)
 1 tsp vanilla extract

In a food processor combine the dry ingredients - flour, sugar, baking powder, ginger and salt.

Add to the food processor - stem ginger, coconut oil, flax-egg and vanilla extract

Bake in a preheated oven 180 degrees centigrade (fan-assisted) for 15 mins.

Cool then enjoy.

    Could the tigernut flour be replaced with any other type of gluten-free flour ? Thanks

      Not in this recipe. It is quite a unique flour in that respect.

    If I left out the sugar would I need to substitute for anything extra?

      You could probably add a second flax egg and use far less sugar.
