Chocolate Fridge Cake is something I enjoyed as a child. The taste and smell is extremely evocative. I simply wanted to create a version of my childhood favourite that worked for those who cannot tolerate gluten (like me) and dairy.
5 Nutribrex (can use Weetabix or Oatibix for a gluten version)
200 g soft dates
150 g chopped nuts or seeds
30 g cacao or cocoa powder
35 g maple syrup
120 g dark chocolate

Blend all ingredients except the dark chocolate in a food processor to a crumb-like texture

Meanwhile, melt the chocolate in a bowl over a small saucepan of boiling water.

Push the the contents of the food processor into a 20cm by 20cm, linked baking tin using the palms of your hands.

Pour over the melted chocolate and spread evenly.

Leave in the fridge for 3-4 hours before cutting into 9 portions.
I’m in Aus can’t have wheat and do t have Nutribux, what else could I use pls?? What about almond meal??
Another cereal would work. Can you get oatibix where you are?
