Oat and Spelt Digestives

The digestive was first developed in 1839 by two Scottish doctors to aid digestion. The irony today is that looking at the list of ingredients you wouldn't think it would help much with digestion. So I have adapted the recipe!

 180 g Oats
 120 g Wholegrain spelt flour
 2 ½ tsp Baking powder
 ½ tsp Salt
 115 g Butter at room temperature
 65 g Coconut sugar
 4 tbsp Milk (dairy or non-dairy)

Preheat the oven to 190°C (fan-assisted)

Whizz the oats in a food processor to flour

Add the spelt flour, salt and baking powder and stir or whizz on a low speed to combine.

Add the butter and combine until the mixture looks like breadcrumbs.

Add the sugar and milk and mix until you have a dough.

Roll the dough out on a floured surface. Cut out approximately 20 biscuits.

Lay on a baking sheet (you may need two baking sheets for this quantity of dough) covered in greaseproof paper. Prick the biscuits with a fork twice and brush with water.

Bake for 15 minutes, until golden brown.

    Wonderful! Worked well with ordinary caster sugar as I didn’t have coconut sugar. Reduced the ordinary sugar by 1/3 recipe. Delicious.
