A easy malt loaf recipe, with sweetness from nutrient-rich bananas, dried fruit as well as malt syrup and a little sugar. An ideal pre workout or competition snack.
100 ml black tea
100 g dried dates, chopped
100 g dried figs, chopped
150 g malt syrup - barley or rice (can use molasses and maple syrup for a gluten free version)
50 g unrefined sugar (coconut sugar tastes great)
250 g plain flour (can use gluten free blend)
2 tsp baking powder
2 bananas

soak the fruit in the tea for up to 4 hours

preheat oven to 160 degrees centigrade (fan assisted) or 180 degrees centigrade

heat the malt syrup and sugar in a small saucepan until the sugar has dissolved

mix the flour, baking powder in a bowl

combine the mashed banana, melted sugar/syrup and tea-soaked fruit

mix wet and dry ingredients together

pour batter into a greased and lined 2lb loaf tin

bake for 1 hour, cool then slice
