Grain Free Muesli Bread

In a bid to reduce the amount of food wasted in our family I decided that as this paleo muesli (from Aldi) was not being eaten I'd turn it into a loaf instead!

Ingredients
 220 g Nutty paleo muesli(from Aldi)
 60 g Almonds
 30 g Arrowroot powder
 1 tsp Bicarbonate of soda
 Pinch of salt
 125 Ghee or butter
 80 g Natural yogurt
 25 g Molasses
 4 Eggs
 1 tsp Apple cider vinegar

Method

Preheat the oven to 180 degrees centigrade (fan assisted)

Grind the muesli and nuts to a flour in a food processor. Add the arrowroot, bicarbonate and salt and mix to combine.

In a bowl mix the ghee, yogurt, molasses, eggs and cider vinegar. Once combined add the dry mix to the wet. Stir to combine.

Pour into a greased and lined 2lb loaf tin.

Bake for 40 minutes. Remove from the oven and leave to cool then once cooled a little remove from the loaf tin. Slice and serve. Serving suggestion: toasted with butter on top.
